Excepting the koshering of cookware, I'll cook according to them, but claiming converted religiosity while picking and choosing which of those laws to follow while making me stand there trying to figure out what I can cook and which exceptions to the exceptions I have available? O RLY! As for tofu, that would never fly. Our chef is strict about using traditional ingredients and recipes indigenous to this specific cuisine. It's his place, he was born in the old country, he gets to say that. The cuisine itself is highly meat centric, especially when it comes to pork and shellfish combinations, but we do have nice vegetarian and vegan options available. That said, it's not a veg restaurant; vegs generally have 3 4 cold choices, one hot choice, plus cheese and dessert.
